Fried corn dumpling with cheese recipe

Ingredients for making fried corn muffins with cheese:
½ cup of green corn
½ cup of water (120 milliliters)
3 tablespoons butter
1 cup of flour (140 grams)
½ cup sour cream
100 grams of mozzarella
1 teaspoon of cumin
breadcrumbs to bread
How to make fried corn muffin with cheese:
Start by separating the ingredients of this corn savory recipe to keep the preparation well organized.
Beat the corn with the water in the blender until smooth.
You can replace the water with vegetable stock if you want.
Now bring a pan over medium heat and place the butter and blender mixture.
When the butter has melted and the broth is almost boiling, add the salt, cumin and mix well.
Then add the flour and stir continuously.
Tip: sift the flour before adding it to the pan, to avoid lumps in the dough of the corn muffin.
Stir until it reaches that point, releasing from the bottom of the pan.
Then add the cream.
Mix well and, when everything is well incorporated, as in the photo, turn off the heat and let the dough cool.
Now take a portion of the dough, open it in your palm and fill it with mozzarella cheese.
Tip: cut the mozzarella cheese into small cubes, to make filling the dough easier. You can also use grated mozzarella cheese, but in this case, lightly knead small portions to make them more compact.
Close by forming a smooth ball - remember that if the dough is breaking or if it is not closed properly, the cheese filling may come out during frying.
Pass all the balls in the breadcrumbs, this is a trick to get a corn cake with crunchy cheese.
And finally, fry the corn cakes in new, clean oil until they are golden brown.
Tip: fry only 3-4 at a time to avoid lowering the oil temperature.
Finally, just remove the excess oil on a paper towel and serve your fried corn muffin with cheese!
